Question, if we use what we see with Ukraine drone striking targets in Russia, how good are US air defense in this universe if Mexico decides to do the same, we now, ore i think Iran is still Iran in this universe so Mexico might be able to get their hands on drones and even can produce them.

Good question. If the Iranians do provide those systems to the Mexicans, on the principle of "My Enemy's Enemy is My Friend", then the Mexicans had best be careful. It's one thing to hit the Security Zone, for those areas have not been formally annexed to the U.S. (yet), but if they try it against Baja, it's a whole different matter. At the very least, in either case, the factory producing those drones in Mexico will be....dismantled via high explosives.

Doubtful, unless the AF wants to copy the Navy and use some as MiG-29 surrogates in the Aggressor role.

When non-AF aircraft are flown at TPS, they are usually from NAWC China Lake: the two establishments are relatively close, and borrowing a Hornet or other aircraft for a TPS class to fly isn't that big a deal. It saves the AF the money of introducing an aircraft that would only be used by one unit, saves the money training pilots and maintenance personnel (unless the latter are hired as contractors, in which case, the money is still saved by not issuing the maintenance contract to whatever company makes the winning offer), and so on.

Is the current tension in the Middle East cannon in here, like Iran being the last major bad guy funding Yemen, Hezbollah, pro-Iran groups in Iraq and keeping up the current regime in Syria.
